The process of our wine undergoes a careful and studied process. The firs step takes place in the vineyard with the accomplishment of exhaustive analyses, it is right there when the process of the harvesting begins.

After the harvest, the grapes are quickly taken from the vineyard to the cellar, where the bunches are sorted at the selection table. Any unripe or rotten grapes are rejected. The next step is to put the grapes into a crusher and de-stemmer, which separates the fruit from the stems and then crushes the berries.

30% of the wine begins with the malolactic fermentation in oak barrels, the rest in stainsteel vats at a controllable temperature.

The ageing takes place in French and American oak barrels.
